Dutch Erwtensoep Recipe – Classic Pea Soup for Cozy Winter Days

What is Erwtensoep?

Erwtensoep, also known as “snert,” is a thick, hearty Dutch pea soup that’s a true winter staple in the Netherlands. Made with split green peas, vegetables, and often smoked sausage (rookworst), this soup is so thick that, as the Dutch say, “your spoon can stand upright in it!” Erwtensoep is traditionally enjoyed during the coldest months, especially after ice skating or outdoor activities, and is a symbol of Dutch coziness and togetherness.

Quick & Simple Erwtensoep Recipe

Ingredients:

  • 300g split green peas (dried)
  • 1.5 liters water
  • 1 smoked sausage (rookworst) or ham (optional)
  • 1–2 potatoes, peeled and diced
  • 2 carrots, diced
  • 1 leek, sliced
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 1 bay leaf
  • Salt & pepper to taste

Instructions:

  1. Rinse the split peas under cold water.
  2. In a large pot, add the peas and water. Bring to a boil and skim off any foam.
  3. Add potatoes, carrots, leek, onion, celery, and bay leaf. Simmer for about 45–60 minutes, stirring occasionally.
  4. Add the smoked sausage (whole) in the last 15 minutes of cooking.
  5. Remove the bay leaf and sausage. Slice the sausage and return to the soup.
  6. Season with salt and pepper. The soup should be thick—almost like a stew!
  7. Serve hot, ideally with rye bread and a slice of bacon or cheese.

Erwtensoep tastes even better the next day. Make a big batch and reheat for extra flavor!
